Siven (Nevis spelled backwards). An exquisite dark rum-based cocktail, balanced with a sour fruity flavor and topped off with a little secret.
SIVEN Signature Cocktail Ingredients:
60 ml Cavalier Antiguan Dark Rum
30 ml Wray and Nephew Jamaican Rum
30 ml Pineapple Juice
15 ml Passion Fruit Puree
30 ml Cranberry Juice
15 ml Freshly Squeezed Lime Juice
1/2 tsp Brown Sugar
Pour all the ingredients, apart from the Wray and Nephew rum, into a shaker. Add ice and shake for 30 seconds. Pour the mix directly to glass without straining (this way, you can achieve the thick foam on top).
In a new metal creamer, add the Wray and Nephew rum and the sugar and carefully light the rum. Leave the fire burn for 10 seconds, and then move the creamer in a circular motion to caramelize the sugar. Add the caramelized sugar to the cocktail. Enjoy!
